I thought it would be appropriate that the first post is a RECIPE! Who doesn’t love food? If you don’t, we might not get along. I’m a sucker for a fantastic meal/dessert/beverage! Today I introduce you to a surprisingly delicious cookie I call. . .

Experiment Cookies

Contrary to the name, they actually turned out very tasty & this recipe can be a base to ANY flavor cookie your heart desires! #joy

Without further ado:

Pre-heat oven to 350°F & spray cookie sheet.

Mix dry ingredients:

1 box sugar free pudding mix of your choice (I used cheesecake; pistachio was good too)

1/2 cup kodiak cake mix (buttermilk is universal but use any)

1/2 tsp baking powder

1/2 cup stevia

Separately mix wet ingredients:

1 tsp vanilla

1/2 cup (112g) fat free plain greek yogurt

2 large eggs

1/4 cup brown sugar

Combine the 2 & stir until smooth. If you enjoy a few tastes of the batter, it will make 9 cookies; otherwise 10. Bake for 10-12 minutes. (I like to check on them at 8)

Also with the recipe above I have conveniently tracked the macronutrients, because that’s what I do.

Macros per cookie = 50cal/1.2f/6c/4p

 

You can add any kind of nuts, chocolate chips, Craisins, M&Ms, Oreo crumbles ANY-THING! Get creative!

Side-note: I do enjoy my treats on the sweeter side, so adjust the sweetener to your liking but keep in mind it will change the consistency of your batter.

Disclaimer: I try to avoid artificial sweeteners & instead eat real, whole food. However in any weight-loss journey, whatever your goals are, a craving for a treat is going to happen & baking something like this is better for your waistline than visiting the bakery in your local grocery store. #feelme
