Lazy Girl Blueberry Muffins

There is nothing quite like a warm blueberry muffin. What makes it even better is knowing that each muffin is 100 calories & 6.5g of protein(!!).

These were created somewhat on a whim. John was craving blueberry muffins for about 2 weeks & since we’re not allowed to bring home Costco muffins (I would eat at least 2 of them/day until they’re gone).

This recipe is super easy (hence the name); currently I don’t have any coconut or almond flour lying around so I used some Bisquik mix (I’ve also used Kodiak Buttermilk mix–but I ran out of that also).

Start by pre-heating the oven to 350º

Mix dry ingredients:

  • 205g of bisquik (approx. 1¾ cup)
  • 3tbsp splenda
  • 1 scoop quest baking blend protein powder

Separately mix wet ingredients:

  • 133g Chobani 0% plain greek yogurt (a little more than half cup; ‘heaping’ half cup)
  • 3 large eggs
  • 75ml whole milk

Combine the wet & dry ingredients & whisk together until smooth. Lastly I added in 100g of blueberries. Check them after 8 mins, they bake pretty fast. I used frozen blueberries so some of them took a little longer.

Macros per muffin: 104cal/3fat/13.5 carb/6.5 protein
