Happy Monday all! It’s been a little while since I’ve checked in, sorry for the absence.
I figured it’s only appropriate to have a yummy cookie recipe the day before Valentines Day. The best part is they won’t completely de-rail your diet AND they taste delicious! #win
I made these the other day, tasted them & instantly regretted not using maple syrup as my sweetener. So here is the modified (albeit much better) version of these cookies. The macros will be slightly different, more carbs depending on the type of maple syrup you use.
It’s another one of those easy recipes where you mix all the dry ingredients together, separately mix wet ingredients then combine for a gooey cookie dough (delicious) texture.
Pre-heat oven to 350º & here is what you’ll need:
∇ 1 cup almond flour
∇ 1/2 cup coconut flour
∇ 1/2-1 tsp baking powder
∇ 1/2 tbsp whole flax seeds
∇ 1/4 cup stevia
∇ pinch of salt
Mix & set aside.
¤ 2 eggs
¤ 2 tbsp softened butter
¤ 1 tsp vanilla
¤ 45g ( a little less than 1/4 cup) greek yogurt
¤ a heaping splash of maple syrup
¤ 2 tbsp brown sugar
Mix together until combined & no lumps, then slowly pour into your dry ingredients mixing as you go. Next is the best part–add-ins! I used chocolate chips (in about half, the other half I left plain), I think pecans would be super good, it will bring out that nutty flavor from the almond flour & flax seeds. YUM! I’m salivating over here! Scoop into heaping tablespoon size balls & flatten out with the back of your spoon. Check on them after 10 minutes, mine took a little longer to bake because the batter was pretty gooey.
Personally, I did not let them cool before taste testing them but do as you will. They’re delicious either way! Enjoy!
