Mongolian Beef

You know it’s time to celebrate when the husband applauds multiple meals you’ve cooked! This one was one of his favorites…probably because it’s made with steak. It’s better than takeout because you know that the ingredients are GOOD for you!

I’ve been reading through the Daniel Plan (for the 2nd time)–it’s basically a wellness guide to life following the 5 essential principles: Faith; Food; Fitness; Focus; Friends. It’s an excellent read that reminds us that being healthy isn’t just about our physical appearance, but honoring the body God gave us—inside & out!

Anyway, the food principal somewhat follows a paleo style of eating–veggies, meats & fruit–however it does include beans & whole grains. Dairy may or may not be included depending on how your body responds, same goes for gluten. Simply put, cut out the processed foods we’re (unfortunately) so accustomed to eating & replace it with REAL food that swims, walks or grows on a tree or out of the ground. Seems pretty simple…right?

So onward with the recipe…which, as you might guess is from the Daniel Plan Cookbook! Sidenote: This is slightly adapted to my liking & double the recipe in the cookbook because we’re hungry kids here in the Cenname household.

 

iNGREDIENTS:

•1 cup bragg’s liquid aminos (soy sauce)

•6T apple cider vinegar

•4T local honey

•4T sesame oil

•1 cup orange juice

•several drops of Frank’s hot sauce

•2.5lbs strip steak (the first time I used flank–& I liked it better)

•1/2 cup flour (for thickening)

•2T coconut oil + lots of coconut oil spray

•1T each of minced ginger & garlic

•1/2 tsp red pepper flakes

•1/2 onion diced up

•4T green onion diced

•black rice ramen; rice noodles; buckwheat noodles—whatever you like even rice!

Directions:

  1. mix first 6 ingredients together in bowl & set aside
  2. Place sliced steak in ziplock bag with flour–let stand for 10mins
  3.  cook noodles/rice as directions state
  4. Heat 1T coconut oil; minced ginger & garlic & onion; & sauce from step 1 & allow to boil for 5-6mins–set aside
  5. heat remaining 2T coconut oil & cook steak
  6. add sauce to steak & allow to boil for 1-2 minutes & simmer on low until sauce thickens (I had to add a few more tablespoons of flour)
  7. spoonful over rice/noodles & sprinkle green onions on top! Enjoy!
