Green Mac n’ Cheese

In light of the upcoming holiday, I thought I would get festive in the kitchen this week. I’ve always liked the color green, 4 leaf clovers are good luck & I’m pretty sure I have some Irish blood in me somewhere.

I can’t take credit for this recipe completely, because I originally got it from the Earth Fare website. If you don’t know what Earth Fare is, I would describe it as cross between Sprouts & Whole Foods—(slightly) more affordable but nice organic/health food store.  Which we can all agree is pretty awesome with all our crappy food options out there.

This is a pretty lazy girl recipe, but it’s really hearty & a good balance of protein, carbs & fats. I also know that if I smother any vegetable with cheese or gravy, the more likely I am to get John to eat his veggies! #manchild

Green Mac and Cheese:

Ingredients:

  • 1 rotisserie chicken (de-boned & set aside)
  • 2 boxes Annie’s white cheddar & shells
  • 1 cup milk
  • 4 oz cream cheese
  • 4 tbsp butter
  • 1 bag chopped spinach
  • 1 tsp garlic
  • Salt & pepper (or Nature’s Seasoning) to taste

Instructions:

Make shells as instructed on box.

In blender or food processor blend spinach, cream cheese, butter, garlic, milk & seasonings until smooth. If you’re using frozen spinach, be sure to thaw it out & squeeze out an excess water before blending.

Add chicken & your green mixture to the pot with the prepared shells, mix well on medium low heat until everything is warmed up. ENJOY!

Sidenote: I totally forgot to add the butter! oops–it still came out good, but I bet the flavor would have been a better with the butter. Don’t tell John!
